Hello! Welcome to my blog! Here, you'll find a collection of my favorite things to do, including book reviews, baking recipes, and DIY projects. I also post random things that go through my head, such as answers to random questions I have and random thoughts that go through my mind. A bit about myself: My name is Jenny Chau. I love animals, crafting, baking, pilates, and reading! When I have free time, you'll probably find me sticking my nose in a book. I especially like fiction books in the genres of dystopian, adventure, and action. My favorite books are The Darkest Minds series by Alexandra Bracken, the Uglies series by Scott Westerfeld, the Under the Never Sky series by Veronica Rossi, and The Blood of Eden series by Julie Kagawa. I'm quite petite in size and I'm pretty shy. I have the cutest dog ever named Chiko. He's a cream-colored Pomeranian, and he's quite big for his breed, probably because we fed him too much milk when he was little. H

Protein Coffee Jellies

Protein Coffee Jellies Yummy jelly/gummy snacks that taste like coffee! Super simple to make and perfect for an extra boost of protein or caffeine! Ingredients: 3 packets Knox Gelatin 1 cup soy milk +1/2 cup soy milk (milk or water also work) 2 tsp trader joes columbian coffee (or desired coffee source) 5 tsp honey (or prefered sweetener)  Procedure: Add gelatin to 1/2 cup soymilk and let sit while you do step 2. This is to let the geletin bloom so that it doesn't get chunky when you add it to the hot coffee. Add 1 cup soy milk to a sauce pot and heat over medium-low heat until simmering. Remove from heat. Add coffee and honey to hot soy milk. Stir. Add gelatin mixture to hot coffee mixture. Stir until gelatin dissolves. Pour mixture into molds or a baking dish. Refrigerate for at least 2 hours or overnight. Pop the jellies out of the mold and enjoy!

Best Soft Pretzels EVER!

I have tried a lot of recipes. Most of which somehow don't turn out right. I have no idea why, but they always seem to fail, especially on the first attempt making it. But, low and behold, a soft pretzel recipe that actually turned out SO GOOD on my first try making the recipe! I have already made this recipe multiple times because of how good it is! It's soft, especially right out of the oven.  It's buttery (no kidding), even though it has NO BUTTER in it whatsoever (so perfect for those who can't have dairy, like me!).  And, it actually tastes like a pretzel! The recipe is adapted from the "Buttery Soft Pretzels" recipe from Allrecipes.com. Some changes I made: I decreased the amount of flour by 1 cup because my dough was already doughy enough (adding the extra 1 cup would have made the dough too dry).  I decreased the boiling water by 1 cup because I made each pretzel smaller in size, which meant I could use a smaller pot to dip my pretzels in an

Why is coconut oil healthy?

What do coconut oil, butter, and other kinds of fat from animals have in common? They are all saturated fats. Yet coconut oil is supposedly good for us with health benefits such as weight loss, increasing good cholesterol levels, and decreasing risk of cardiovascular diseases. On the other hand, the American Heart Association recommends us to limit saturated fat consumption. So ... what explains the benefits of coconut oil? The difference between coconut oil and fat from animals is in the length of the fatty acids. Coconut oil is a medium-chain fatty acid (MCFA) while fat from animals are long-chain fatty acids (LCFA). MCFAs have a carbon backbone of 7-12 carbons, while LCFAs have more than 12 carbons. The body digests these fats differently. LCFAs are digested through the lymphatic system. LCFAs are packaged into chylomicrons which circulate through the body before reaching the liver. LCFAs are released from the chylomicron by lipoprotein lipase. All cells secrete this enzyme in

Honey Ogura Cake

  Hello everyone! I recently made this Honey Ogura cake for my dad's birthday. If any of you live near Milpitas, CA, there's a Chinese bakery called Golden Bakery that sells honey cakes. Their cakes have a super fine crumb and it's spongy, fluffy, and just melts in your mouth. Ever since I've tried that honey cake, I have wanted to recreate it. And, thus marks the start of my journey to recreating that honey cake. I started off by researching different types of cakes. I thought about making a regular western cake (like those in Safeway), but western cakes lacked that tight crumb seen in the honey cake. Then I thought about sponge cakes, but looking back at all the sponge cakes I've tried making in the past, my sponge cakes always seem to deflate and they always had lots of bubbles in the crumb (hence they have a large, coarse crumb). How to Build a Giant Snowman

Benry Benry the Snowman Born: January 1, 2018 Height: 4 foot 8 inches I have always wanted to build a giant snowman. It's been on my bucket list ever since I can remember, but I've never been able to successfully build one.  This winter season, I went to Toronto, Canada where it snowed a lot . There was tons of fresh snow everywhere (great for skiing and sledding). And, that was the key to building a successful snowman: fresh snow and lots of it. I built this snowman with my sister and cousins, so I can't take full credit, but I can say that it was a very rewarding experience although it was really cold and my toes and fingers almost fell off when I was taking pictures of our snowman.  I have compiled a list of tips and tricks to help you build your own snowman: YOU MUST USE FRESH SNOW! I loved it. I could relate to Keeley a bit. For example, I usually find myself able to express myself through text better than face-to-face. But, I expected Keeley to be more afraid to talk rather than just choosing not to talk, like having social anxiety.  Aside from Keeley’s personality, I think all high school students can relate to some part of the story, especially since Keeley is a high school senior dealing with college apps and boys. This book really highlights the struggles of high school seniors like grades, dating, friends, driving, procrastination, etc.  The texts, corny jokes, and teasing between Keeley and Talon really give you laugh. AND THE PEEPS. OMG I never would have thought Peeps could add such a nice touch to the story. I also liked the

The story and the telling (of storytelling, ha, get it?) are impeccable. This book draws you in right from the beginning. It’s filled with action that gets you excited and your adrenaline going. Mare is a caring but somewhat badass girl whose life turns upside-down with the discovery of her new power. There are betrayals that leave your eyes wide and jaw dropped. And, best of all, it’s realistic (not counting the superpowers or blood color the characters have). Characters die, they lie, they betray, they lose hope, they learn, they fail.
