Protein Coffee Jellies
Yummy jelly/gummy snacks that taste like coffee! Super simple to make and perfect for an extra boost of protein or caffeine!
Ingredients:
- 3 packets Knox Gelatin
- 1 cup soy milk +1/2 cup soy milk (milk or water also work)
- 2 tsp trader joes columbian coffee (or desired coffee source)
- 5 tsp honey (or prefered sweetener)
Procedure:
- Add gelatin to 1/2 cup soymilk and let sit while you do step 2. This is to let the geletin bloom so that it doesn't get chunky when you add it to the hot coffee.
- Add 1 cup soy milk to a sauce pot and heat over medium-low heat until simmering. Remove from heat.
- Add coffee and honey to hot soy milk. Stir.
- Add gelatin mixture to hot coffee mixture. Stir until gelatin dissolves.
- Pour mixture into molds or a baking dish. Refrigerate for at least 2 hours or overnight.
- Pop the jellies out of the mold and enjoy!
